Ribalta, 37, has signed a deal until 2020-21, Zenit announced on Tuesday afternoon
And speaking at his unveiling at the Russian outfit, Ribalta admitted he would pay close attention to the club's academy
"I've been working in football for many years and spent a long time at Juventus and have worked with other Italian clubs, Novara and Torino," he said
"I also spent last year at Manchester United, after many years at Juventus I decided to go there for a challenge
"When this proposal from Zenit came I have no doubts, because Zenit is really a very big name and a very large club
" Ribalta joined United after spending five years at Italian giants Juventus. The scout was highly revered for his work in Turin after focusing on the club's youth policy
Ribalta has also worked as a scout at Torino, AC Milan and Novara Calcio. During his time at Old Trafford, he worked with head of global scouting Marcel Bout and chief scout Jim Lawlor
It is unclear whether United will replace Ribalta in the coming weeks. As for United's other outgoings this summer, playing staff such as Daley Blind and Sam Johnstone have departed the club
Meanwhile, Mourinho is fighting a losing battle to sign replacements as he looks to bolster his squad
The Portuguese coach has bemoaned United's transfer business this summer, demanding more players after Fred, Diogo Dalot and Lee Grant were brought to Old Trafford
