hi guys ! welcome to "les plaisirs sucrés d'Antoine

I hope you're fine and hope you had an amazing Christmas time

I get back to you today because I challenged myself

by making the Christmas Rubik's cube by Cédric Grolet

which is in the "fou de pâtisserie " n° 26

when I saw it in the magazine I told myself that I was gonna do it

and I did a tutorial just to show you how to do it

it is an amazing creation that will light up your Christmas or new year's eve tables

this Rubik's cube is made of 25 cubes divided into 5 different flavors

I modified the recipe a little bit, I replace the tuffle by vanilla

5 vanilla cubes, 5 lemon marmalade

5 with chestnut

5 with praline with grated coconut and dryed pancakes

and 5 other with praline and praline grain

and for the support, I did not by it, I made it myself with white chocolate

excuse me, the video is quite long but I had to be precise so you can make it at home

I pull on my apron and let's start the recipe

I start by the vanilla biscuit, you'll need these ingredients

125 g of egg

40 g of inverted sugar, you can find the tutorial on my channel

60 g of sugar

40 g of ground almonds

75 g of T45 flour

4 g of baking powder

65 g of 30% heavy cream

40 g of pip oil

25 g of 30% white chocolate and 2 g of vanilla powder

I first whisk together the eggs

with inverted sugar

I add vanilla powder

and sugar

I whisk to combine

when it's combine I mix together the banking powder with the flour

and I add it to the batter

I add ground almonds

and I whisk again

I ad then the heavy cream little by little while whisking

I now melt the chocolate with microwave

when it's melted I mix it with pip oil

I pour it in a bowl

and I add to it 2 spoons of the batter

and I pour it back to the batter

I whisk one lats lime before baking it on my silicon mat for 8 min at 180°C

I do not spread it more and let's bake it 8 min at 180°C

after 8 min, it's ready and it smells so good ! I let it cool down until assembly

I carry on by making the 5 garnish that will take place in the cubes

I start with vanilla cream with these ingredients

125 g of 30% white chololate

112 g of 30% heavy cream

5 g of cocoa butter and 3 g of vanilla powder

I first melt the chocolate with microwave at low power

once it's melted I leave it aside

I bring to the boil the heavy cream with the vanilla powder

when it's boiling I pour it on the chocolate in 3 times

I film by contact and store in the fridge until assembly

It's better if I add the melted cocoa butter

so I melt it

and once it's melted I add it to the cream

and now I can film

to the fridge at least 3 hours

I then do the lemon marmalade with these ingredients

150 g of yellow lemon juice

12 g of sugar

2 g of agar-agar

65 g of diced candied lemon

30 g of caviar lemon

and 10 cut mint leaves

I first make a lemon gel

I bring to the boil the lemon juice, sugar and agar agar

and when it gets hard I blend it and add the rest of ingredients

I pour the lemon juice in the sauce pan

I mix together agar agar and sugar

I drop this mix little by little

I now bring it to the boil and let it boil for 2 min

after 2 min the juice is ready

I pour it in a container and cool it as fast as possible to carry on the recipe

you can cool it by placing the bowl into cold water and the place it in the freezer

when it's hard I blend it

I add candied lemon

mint

and caviar lemon

once it's combined I drop it in a piping bag and store into the fridge

I then make the chestnut cream with these ingredients

110 g of milk

72 g of chestnut paste

45 g of candied chestnut lumps

17 g of egg yolk

7 g of sugar

and 1 g of gelatin

I first dry the gelatin into cold water

and in the sauce pan I whisk the egg yolk with sugar

I add the milk

and I make a custard, I heat it until it reaches 82°C

I check with my thermometer

when it reached 82°C

I add the gelatin that I squeeze to remove excess water

I add the chestnut paste

I get ride of the chestnuts lumps but some remains

I'm gonna blend it to make it smooth

I pour it in a smaller container

once it's smooth I put it back in the sauce pan

and I add the candied chestnut lumps

I pour it in a piping bag and store into the fridge until assembly

I then do the coconut praline with these ingredients

85 g of grated coconut

78 g of praline paste

15 g of dried pancakes

and 2,5 g of cocoa butter

I first roast the coconut at 170°C for 5 min

I drop it in my mixer

I add praline paste

and I blend it to get a smooth batter

I now melt the cocoa butter

and when it's melted I drop the praline coco in a bowl

I add cocoa butter

and dried pancakes

I pour it in a piping bag and store it into the fridge until assembly

to finish I make the praline and praline grain cream with these ingredients

100 g of homemade praline

10 g of grain praline

2,5 g of olive oil

3,5 g of pip oil

and a pinch of fleur de sel

I simply mix all together

once it's combined I drop it in a piping bag and store into the fridge

I then make a chocolate coating that will coat my different cubes

before decorating them

you'll need these ingredients

150 g of 30% white chocolate

150 g of cocoa butter and 3 g of white oil soluble coloring powder

I fist melt the chocolate with microwave

once it's melted I melt the cocoa butter in a sauce pan

once it's melted I add the white coloring powder

and I pour the melted cocoa butter on it

I then blend it

the coating is done

I realize a white glaze to glaze some cubes

in order to give the a shiny effect

you'll need these ingredients

70 g of milk

145 g of 30% heavy cream

140 + 45 g of sugar

50 g of glucose syrup

5 g of oil soluble white colring powder

12 g of corn flour

and 5 g of gelatin

I first wet the gelatin into cold water

I then pour in the sauce pan the milk

heavy cream

big amount of sugar

and glucose syrup

and I bring it to the boil

when it's boiling, I mix together the corn flour with small amount of sugar

and the coloring powder

I mix with a spoon

and I add it little by little to the syrup

I bring it to a boil again

the glaze is now at 40-45°C

I add the squeezed gelatin

I then blend it

I leave it aside until assembly

once the coating and the glaze are done I start making the cubes with the vanilla biscuit and the garnishes

I start with the chestnut gel

I squeeze it to homogenize the cream

I cut the piping bag

I cut biscuit squares

be careful you'll have to cut 50 of them

I then pipe the cream inside

and I leave some space for the second biscuit

I close with the second bicuit

I pop it in the fridge for 1h because I only have 5 metal cubes

so after 1h I unmould the first onces

and make the seconds

it's a bit long but it's resourcefulness

after 1h I unmould the cubes

I warm up a little with my thumbs

and I press

and I put it back in the freezer while I make the five others

the five cubes are now clean

I can carry on with another garnish

so I take the praline-praline grain garnish

I take out the tray from freezer

I put them beside their friends

and I write down what it is filled with

I put it back to the freezer

as before I unmould and I clean

cut again and pipe the lemon marmalade

and as before close the cubes and pop in the freezer

for the vanilla cream, I'm just gonna whisk it

to incorporate air

I have now a frothy cream that I pour in a piping bag

I unmoulded the cubes, I can now garnish with the praline-coco cream

It is a bit hard after the fridge so I make it soft by melting it 20 sec with the microwave

it is now soft I can cut the biscuit again

once the 25 cubes are unmouled

I leave them 30 min in the freezer without metal cubes

and I melt the coating to coat them after freezing time

back to the freezer

during these 30 min I melt the coating

it is now at 45°C, I let it cool down at 32°C before coating the cubes

it is now at 33°C I take out the cubes from the freezer

I start with the chestnut once

I took a sheet to write the garnish down

and I'll finish by praline-praline grain

for which i'll add praline grains to the coating

so I take out the first fives from freezer

I have the 5 chestnut cubes with some toothpick

I pick the first one

and I soak them few sec in the coating

I let it get hard

and I remove the pick

I put it on the chestnut line

and I carry on with the rest

I do exactly the same with the other sets and just before the praline-praline grain set I'll add praline grain to the coating

to the freezer

I decorate the first chestnut set with chestnut cream

I make little spaghetti on top

I drop the chestnut cream in a piping bag with a piping bag tip with a very small hole

And I make spaghetti

I put them back to the freezer so I can spray them with a white velvety effect spray

after protecting the counter with plastic wrap I took out the chestnut cubes

I spray them with velvety effect spray

I place them beside their friends

I pop it in the fridge

I still have the 33 lats sets that I'm gonna glaze with the white glaze

I heat it at 45°C

and I let it cool down at 28-29°C before glazing the little cubes

when the glaze is at 28°C I glaze the cubes

now that the glaze is hard, I place the cubes on the serving plate

and I put them back in the fridge so the glaze gets harder

I wrote down what was inside each set

I have vanilla with remain all white

lemon that I'll coat with silver foil

and coconut that i'll dust with grated coconut

I dust with coconut

I choose to decorate with silver foil the set with lemon marmalade

when the 225 cubes are done I can start assembly

for the assembly I did not by the support in a store, I made it myself with white chocolate

I did three 11cm x 11cm squares

and 2 cylinder of 3,6 cm length
