Blanch spinach in boiling water for 10 seconds.
Chill in ice water to preserve the chlorophyll.
Mix well-drained spinach with 200 g of water.
Blend in a food processor for 2 minutes.
Strain through a cheesecloth and set aside in the fridge.
Mix cold liquefied spinach 1 with Gelatine Cous Cous, stirring with a spoon.
Let hydrate in the fridge for one hour.
After that time, add the liquefied spinach 2 to the previous preparation, stirring with a spoon and let set at least 30 more.
Add the Freeze-dried Spinach Powder and salt, stirring constantly until well integrated.
Set aside.
