Water kefir is a light drink
It is very relented and also diuretic
You can compare it with a kind of lemonade soda
but it contains a little bit of alcohol
Alcohol depends on the amount of air
that was present in the fermentation process
Water kefir needs sugar water for fermentation
Now we are going to the elaboration of the Kefir
we need
1 glass jar
we use more or less 3 tablespoons of Kefir nodules
the same amount of sugar as kefir
1 half lemon or 2 slices
it is possible that it is biological
because we're going to use it with the shell
2 dates or if you have, 1 dry fig
and 1 liter of water
Sugar should be unrefined brown sugar
You can use sugar with more or less molasses
it is according to your taste
and how many benefits you want to introduce in this drink
The water has to be chlorine-free
because chlorine kills all bacteria
also to our good
If you use tap water
use a filter that removes chlorine
or use bottled water
My bottle has the capacity of 1 liter and a half
That's why we use here 4 tablespoons of kefir nodules
and 4 tablespoons of sugar
We put the nodules in a glass jar
we add the sugar
the lemon slices
the dates
and fill the jar with the water
Do not fill it completely but leave a small space
the space of plus or minus 1 finger
we mix the sugar with the nodules
we lightly cover it
Water kefir is not as aggressive as milk kefir
you can cover it with the lid of the jar
if the lid is lined inside
I have already mentioned that water kefir contains some alcohol
The amount depends on the air inside the boat
and with this present in the fermentation
If you cover the bottle with lid
do not cover it tightly
but that there is not much air
So the fermentation produces more gas and less alcohol
If you let it ferment in the air
or you have a lot of air inside the boat
the content of alcohol will be higher
let it sit at room temperature for 48 hours
until the kefir has consumed all the sugar
you can already take the Kefir after 1 day
when there is still sugar
So you still have a sweet drink
If you take it kefir to maintain your health
you can do it perfectly
But if you have any cancer
suffer from candida or something similar
I recommend you to wait
until the kefir has consumed all the sugar
because these diseases feed on sugar
and we want to avoid feeding it

before doing something

the fermentation continues
and the kefir becomes a vinagrosa drink
To consume it we remove the lemon and the dates

Well, this has been the traditional recipe
With these nodules you can ferment absolutely everything
that contains water and sugar
it also means fruit juices
But you have to keep in mind that it costs them more work
take out the fructose sugar
and that's why fermentation needs one more day
besides the nodules do not grow so well in this environment
that in the sugar environment
so it is convenient to go alternating the methods
to let them rest and to recover
But keeping this in mind
there are a lot of varieties
and you will have great joy with these nodules
A good variation is to ferment grape juice
You throw only nodules in juice
and wait 2 or 3 days
There will come out a kind of sangria
if you leave some sugar inside
or a young red wine
if you let ferment all the sugar
If you ferment another fruit juice
I recommend fermenting it 1 day only
Not for health
but a peach juice without sugar is not everyone's things

Now, if you want to make some rest
or go on a trip
and you can not keep doing the procedure
you can leave it in the refrigerator for up to 2 weeks
together with water and sugar without problems
For more time it would be better to wash the nodules
and freeze them in the freezer
Or they can also be dried or dehydrated
to save it in the amario
Dried nodules can be reactivated for up to 1 year
and frozen for at least half a year
To reactivate them you have to have a little patience
because they will not work directly
Until you see a normal attitude
It may take about 5 to 7 days
You throw the first liquid
and you continue with the normal procedure to consume it
And how to get kefir nodules?
Kefir is traditionally given from hand to hand
It is a very beautiful tradition
because it brings something in the universal concept

And as kefir grows continuously
